The syrup prevents the crystals from being encrusted and enables easy acceptance by the bees. Because of its low water content, Ambrosia bee feed dough has a shelf life of 24 months in ideal storage conditions. Unlike other bee food products, Ambrosia is enzyme-inverted instead of acid-inverted. This means it has a lower HMF level than other products. High HMF levels are toxic to bees.
